Delicious Mexican lasagna roll-ups with seasoned beef and cheese, perfect for family meals. Easy to make and fun for kids to help with!
Ingredients:
  • 1 (16 ounce) package lasagna noodles
  • 1 pound ground beef
  • 0.75 cup water
  • 1 (1 ounce) package hot taco seasoning mix
  • 1 (1 pound) package shredded Mexican cheese blend, or as needed
  • 1 (4 ounce) can sliced black olives
  • 1 (28 ounce) jar spaghetti sauce
  • 1 (8 ounce) jar taco sauce
  • 0.25 cup sour cream, or as desired
Instructions:
  • 1. Boil a large pot of lightly salted water. Add lasagna and cook until al dente, about 8 minutes. Drain and gently pat dry with paper towels.
  • In a skillet over medium heat, brown and crumble the ground beef for about 10 minutes, then drain excess grease. Stir in water and taco seasoning mix, cook until thickened for about 2 minutes. Remove from heat and let the meat cool.
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Place a noodle flat on a work surface. Add 1 tablespoon seasoned meat at one end and roll to enclose the filling. Sprinkle with 1 to 2 tablespoons shredded Mexican cheese blend, black olives, and roll to the end. Repeat for remaining noodles.
  • Spread a layer of spaghetti sauce on the bottom of a 9x13-inch baking dish. Place rolled noodles seam side down on top of the sauce. Spoon taco sauce over the noodles, then pour remaining spaghetti sauce on top. Sprinkle any leftover meat sauce over the rolls, cover the dish with foil.
  • Simply bake in the preheated oven for about 40 minutes until the sauce is bubbling and the cheese has melted. Top with a dollop of sour cream before serving.
