Mexican-inspired lasagna rollups: filled with seasoned beef, cottage cheese, salsa, topped with queso sauce and Mexican cheese blend.
Ingredients:
  • 10 uncooked lasagna noodles
  • 1 (16 ounce) jar salsa
  • 1 pound ground beef
  • 1 (1 ounce) packet taco seasoning mix
  • 1 (16 ounce) package cottage cheese
  • 0.5 cup grated Parmesan cheese
  • 1 (15.5 ounce) jar prepared salsa con queso sauce
  • 1.5 cups shredded Mexican cheese blend
Instructions:
  • Fill a large pot with salted water and bring to a vigorous boil. Add lasagna noodles in batches of 3 or 4, ensuring they are fully submerged. Cook uncovered, stirring occasionally, until al dente, approximately 10 minutes per batch. Drain in a colander and lay flat on waxed paper or aluminum foil while cooking remaining noodles.
  • Preheat the oven to a toasty 375 degrees F (190 degrees C) and generously grease a 9x13-inch baking dish. Spread the salsa evenly across the bottom.
  • In a skillet over medium heat, cook ground beef with taco seasoning, breaking it up until browned and crumbly, about 10 minutes. Drain fat and transfer to a large bowl.
  • Combine cottage cheese and Parmesan cheese with the meat. Lay a cooked lasagna noodle flat, spread approximately 1/3 cup of the cheese and meat mixture along its length. Roll up the noodle and arrange the filled rolls, seam sides down, in the baking dish. Pour around 1 1/2 tablespoons of queso sauce over each roll. Cover the dish with foil before baking.
  • Bake the dish in the preheated oven until the sauce is hot and bubbling, around 40 minutes. Next, uncover the dish and generously sprinkle the Mexican cheese blend over the rolls. Return to the oven and bake until the cheese is beautifully melted, for an additional 8 to 10 minutes.
