Tasty taco seasoned beef lasagna, kid-approved. Top with lettuce, tomatoes, olives, and sour cream.
Ingredients:
  • 1 pound lean ground beef
  • 1 (1 ounce) package taco seasoning mix
  • 1 (14 ounce) can peeled and diced tomatoes with juice
  • 10 (6 inch) corn tortillas
  • 1 cup prepared salsa
  • 0.5 cup shredded Colby cheese
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook the ground beef until browned, then mix in the taco seasoning and tomatoes. Prepare a 9x13-inch baking dish by lining it with half of the tortillas. Layer the beef mixture over the tortillas, then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with cheese.
  • Bake at 350°F (175°C) until cheese is melted and bubbly, about 20-30 minutes.
