Spicy mince and bean filled tortilla roll-ups for a mouthwatering family meal.
Ingredients:
  • 80ml (1/3 cup) beef stock
  • 1 large brown onion, chopped
  • 3 garlic cloves, crushed
  • 250g beef mince
  • 1 425g can crushed tomatoes
  • 1 300g can red kidney beans (Edgell brand), rinsed, drained
  • 44.40 gm tomato paste
  • 2 tsp medium Mexican chilli powder blend (MasterFoods brand)
  • 4.50 gm sugar
  • 8-12 20cm diameter Mexican tortillas (Buttercup brand), to serve
  • 56.40 gm extra lite sour cream, to serve
  • Shredded lettuce, to serve
  • Chopped green shallots, to serve
Instructions:
  • In a medium saucepan, combine the stock, onion, and garlic, then gently simmer over medium heat. Cover and cook on low for 10 minutes until the onion softens. Next, raise the heat, add the mince, and cook for 10 minutes, using a wooden spoon to break up the meat until it changes color.
  • Add the undrained tomatoes, kidney beans, tomato paste, chili powder blend, and sugar to the pot. Bring the mixture to a boil over medium-high heat. Reduce heat to low and simmer partially covered for 25 minutes until thickened. Season with salt and pepper to taste before serving.
  • Top the tortillas with a generous spoonful of the mince mixture, a dollop of sour cream, a handful of lettuce, green shallots, and roll them up tightly.
