Gather around for mouthwatering beef and bean tortillas.
Ingredients:
  • 36.40 gm olive oil
  • 600g Gravy Beef, cut into 5cm pieces
  • 1 red capsicum, seeded, coarsely chopped
  • 1 brown onion, thinly sliced
  • 2 garlic cloves, crushed
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 5.00 gm smoked paprika
  • 1/2 tsp cayenne pepper
  • 500ml beef stock
  • 400g can diced tomatoes
  • 400g can kidney beans or black beans, rinsed, drained
  • 20.00 ml red wine vinegar
  • 62.50 ml fresh coriander, chopped
  • 8 mini tortillas
  • 125.00 ml coriander leaves
  • 80g sour cream
  • Steamed brown rice (optional), to serve
Instructions:
  • In a large saucepan over medium-high heat, heat the oil until shimmering. Add the beef and cook, turning occasionally, for about 5 minutes until browned all over. Transfer the beef to a plate.
  • Sauté capsicum and onion in the pan until softened. Stir in garlic, cumin, coriander, paprika, and cayenne pepper and cook until fragrant.
  • Over medium-high heat, incorporate the beef back into the pan with the stock and tomato, allowing it to come to a boil. Lower the heat and simmer covered for 1 1/2 hours until the beef is tender. Use tongs to transfer the beef to a bowl, then shred it coarsely using two forks.
  • Place the beef back into the pan, then pour in the beans and vinegar. Let it simmer without a lid for 10 minutes or until it thickens slightly. Mix in the chopped coriander.
  • Heat the tortillas in the microwave according to the packaging instructions.
  • Transfer the flavorful beef mixture to a decorative serving bowl, generously sprinkle with fresh coriander leaves, and enjoy alongside warm tortillas, tangy sour cream, and fluffy steamed brown rice, if desired.
