Try quick and delicious Indian Pulled Beef Rogan Josh - effortless prep, tantalizing aroma while cooking.
Ingredients:
  • 18.40 gm vegetable oil
  • 1.2kg beef blade roast
  • 1 brown onion, diced
  • 1 sprig fresh curry leaves, leaves picked
  • 5cm piece fresh ginger, grated
  • 115.50 gm rogan josh curry paste
  • 400g can crushed tomatoes
  • 382.50 gm beef stock
  • 1 small eggplant, chopped
  • 400g sweet potato, peeled, chopped
  • 200g grape tomatoes, halved
  • Fried curry leaves (optional, see note)
  • 125.00 ml plain Greek-style yoghurt
  • 6 warmed roti (optional), to serve
Instructions:
  • In a large heavy-based casserole dish, heat vegetable oil over medium-high heat. Brown the beef for 5 minutes on each side. Transfer to a plate.
  • Once the heat is reduced to medium, toss in the onion and curry leaves. Stir and cook for 5 minutes until the onion softens. Introduce the ginger and curry paste, stirring for 1 minute until fragrant. Pour in the crushed tomatoes, stock, and 1 cup of water. Let it all simmer into deliciousness.
  • Add the beef back to the dish, cover it, and simmer over low heat for 2 hours. Flip the beef halfway through until it's nearly tender.
  • Gently introduce the eggplant and potato into the pot. Allow to simmer for 25 minutes, or until the beef and vegetables reach desired tenderness. Sprinkle with salt and pepper to taste.
  • Shred the beef with 2 forks, then return it to the dish along with grape tomatoes. Optionally, garnish with fried curry leaves. Serve with yogurt and roti, if desired.
