Pulled beef nacho salad

Experience a tasty Mexican-inspired salad revamp.
Ingredients:
  • 1 small brown onion, diced
  • 20.00 gm smoked paprika
  • 10.00 gm ground cumin
  • 1/2kg store bought, pre-cooked pulled beef
  • 1 cos lettuce, roughly chopped
  • 2 tomatoes, diced
  • 1 Lebanese cucumbers, diced
  • 100g sliced jalapeños
  • 100g sliced kalamata olives
  • 1 bunch fresh coriander, washed and chopped
  • 100g plain corn chips
  • 132.50 gm Deli Style Ranch Dressing
  • 2 limes, cut in wedges
Instructions:
  • First, heat the fragrant olive oil in a skillet until sizzling, then delicately sauté the onion until tender. Sprinkle in the aromatic spices and season to perfection. Pour in the savory chicken stock and gently place the pulled beef into the pan in large chunks. Simmer until the liquid reduces by half, then effortlessly shred the beef using two forks.
  • Lay out the cos lettuce on a serving platter and layer with pulled beef, tomatoes, cucumber, jalapeños, olives, and chopped coriander. Crush corn chips over the top and mix gently. Drizzle with Praise Deli Style Ranch dressing and garnish with lime wedges before serving.
