Pulled beef pizza recipe

Satisfy the whole family with delicious pulled beef pizza using leftover meat.
Ingredients:
  • 2 large pizza bases
  • 95g pizza sauce
  • 55g pizza cheese
  • 1/4 quantity Texan-Style Pulled Beef (see below)
  • 100g cherry bocconcini, coarsely torn
  • 40g olive
  • 1/4 x 280g jar chargrilled peppers (capsicum), drained, thinly sliced
  • Basil pesto, to serve
  • Baby rocket leaves, to serve
  • 9.20 gm olive oil
  • 1.5kg No Added Hormones Beef Brisket
  • 2 brown onions, cut into wedges
  • 500ml beef
  • 60ml cider vinegar
  • 54.00 gm maple syrup
  • 24.40 gm Worcestershire sauce
  • 20.80 gm tomato sauce
  • 23.40 gm Dijon or American mustard
  • 5.00 gm smoked paprika
  • 2.40 gm onion salt
  • 1 tsp garlic powder
  • 2.50 gm ground cumin
Instructions:
  • Preheat the oven to 150°C. Heat oil in a hot frying pan. Season the beef and sear for 5 minutes on each side until golden brown. Transfer the beef to a roasting pan.
  • Nestle the onion slices snugly around the beef in the pan. Combine stock, vinegar, garlic, maple syrup, Worcestershire sauce, tomato sauce, mustard, paprika, onion salt, garlic powder, oregano, and cumin in a jug. Drizzle the mixture evenly over the beef, making sure to coat it thoroughly.
  • Cover the pan tightly with foil and roast for 3 hours until the beef is fork-tender. Increase the oven temperature to 180°C, uncover, and roast for an additional 30 minutes until the beef is golden brown and the sauce thickens slightly. Let it rest for 15 minutes before serving.
  • Shred the beef using 2 forks until coarse. Mix well with the pan juices and season to taste.
  • Preheat oven to 220°C. Place pizza bases on baking trays and spread sauce evenly. Sprinkle with pizza cheese, then top with beef, bocconcini, olives, and capsicum.
  • Bake the pizzas for 12-15 minutes, or until the cheese is melted and golden. Finish by topping with pesto and a sprinkle of rocket before serving.
