Spicy beef nachos loaded with gooey cheese and topped with fresh red chili slices.
Ingredients:
  • 800g pkt Beef Slow Cooked Brisket with American Style BBQ Sauce
  • 10.00 gm taco seasoning
  • 300g jar mild chunky tomato salsa
  • 200g pkt original corn chips
  • 120g tasty cheese
  • 1 large ripe tomato, finely chopped
  • 1 large ripe avocado, stoned, peeled, finely chopped
  • 1/2 red onion, finely chopped
  • 62.50 ml coarsely chopped coriander
  • 42.00 gm lime juice
  • 80g sour cream
  • 1/2 bunch radishes, thinly sliced
Instructions:
  • Preheat the oven to 200C. Cook the beef according to the packet instructions. Transfer the beef to a heatproof bowl and shred it coarsely using two forks. Mix in the taco seasoning and fold in half of the tomato salsa.
  • 1. Spread corn chips on a large baking tray evenly. 2. Top with beef mixture using a spoon. 3. Sprinkle generously with cheddar cheese. 4. Bake for 12-15 minutes until the cheddar is gooey and the beef is warm.
  • In a small bowl, mix together the tomato, avocado, onion, coriander, and lime juice.
  • Finish by generously spooning the remaining tomato salsa over the beef mixture on the tray, then add dollops of sour cream. Sprinkle with the delicious avocado mixture and radish for a burst of freshness. Season to taste and enjoy!
