Beef and bean burritos

Delicious Mexican beef wraps with beans, corn, and creamy avocado.
Ingredients:
  • 500g beef stir-fry strips
  • 420g four bean mix, drained
  • 420g corn kernels, drained
  • Pinch ground chilli
  • 500g napolitana pasta sauce
  • 2 avocados, flesh removed
  • 1 lime, juiced
  • 200g pkt Rye Bread (8 wraps)
  • Grated cheddar, to serve
  • Mixed salad leaves, to serve
Instructions:
  • Start by heating a large frying pan over medium-high heat. Cook the beef in batches for 2-3 minutes, or until it turns brown. Once done, set it aside. Next, add the bean mix, corn kernels, chili, and half of the napolitana sauce to the pan. Stir and heat until everything is warmed through.
  • Combine the beef with the remaining sauce and stir until everything is heated through.
  • Mash the avocado gently with the lime juice.
  • Spread the beef mixture two-thirds of the way down each wrap. Add a dollop of mashed avocado and sprinkle with grated cheddar. Fold the bottom third up, then fold the sides in. Serve with mixed salad leaves on the side.
