Herb-Coated Mini Cheese Balls

Roll herb and cheese balls for delightful cold appetizers, perfect with bagel chips.
Ingredients:
  • 4 oz cream cheese (half of 8-oz package), softened
  • 1/2 cup crumbled feta cheese (4 oz)*
  • 1/2 teaspoon coarse ground pepper
  • 1/4 cup finely chopped fresh parsley
  • 3 tablespoons finely chopped fresh basil leaves
  • 1 tablespoon finely chopped fresh rosemary leaves
  • 1 teaspoon grated lemon peel
  • 24 plain mini bagel chips (1 1/4 inch)
Instructions:
  • Combine the cheeses and 1/4 teaspoon of pepper in a small bowl. Mash the feta with a fork or the back of a spoon until thoroughly blended. Cover and refrigerate for 45 to 60 minutes until firm, then shape into balls.
  • Mix together fresh parsley, basil, rosemary, lemon peel, and the 1/4 teaspoon of pepper in a small shallow bowl. Shape the cheese mixture into 1-inch balls using about 1 teaspoon of the mixture for each ball, then coat them by rolling in the herb mixture ensuring some cheese is still visible.
  • For immediate serving, arrange each cheese ball on a bagel chip. If making in advance, refrain from placing cheese balls on bagel chips. Instead, cover with plastic wrap and refrigerate for up to 24 hours. When ready to serve, simply place each ball on a bagel chip.
