Delicious Aussie avocado toast with tomato and mint - ideal for a quick lunch or relaxing weekend brunch.
Ingredients:
  • 1 ripe avocado, peeled, quartered
  • 2 large roma tomatoes
  • 4 thick slices light rye bread
  • 36.40 gm extra virgin olive oil
  • 8 mint leaves, torn
  • Leaves from 1/2 butter lettuce
  • 1 lime, cut into wedges
Instructions:
  • Slice the avocado lengthwise without separating the slices. Halve the tomatoes and slice each half without separating the pieces.
  • Cook the bread on the grill or in a toaster until both sides are golden brown, then gently brush with extra virgin olive oil.
  • Top each slice of toast with an avocado half and a tomato half, gently fanning them out. Sprinkle with fresh mint, sea salt, and black pepper. Serve with salad leaves and lime wedges.
