Make Dad's day with a special Father's Day breakfast toast!
Ingredients:
  • 9.20 gm olive oil
  • 4 shortcut bacon rashers
  • 2 ripe avocados
  • 21.00 gm lime juice
  • 100g feta, crumbled
  • 4 slices sourdough bread, toasted
  • 12 semi-dried tomatoes
  • Lime halves, to serve
Instructions:
  • In a hot skillet, cook bacon until golden and crispy on both sides, about 2 minutes per side. Place on paper towel-lined plate.
  • Mash avocado with a splash of refreshing lime juice, then mix in creamy feta. Season with a pinch of salt and pepper and gently stir until perfectly combined.
  • Place the toasted bread on individual plates, then generously spread the avocado mixture on top. Add a crispy layer of bacon and fresh slices of tomato. Serve alongside a wedge of lime for an extra pop of flavor.
