Avocado and fetta breakfast pizza

Brunch pizza with creamy feta, avocado toppings. Perfect for a leisurely morning meal.
Ingredients:
  • 400g can four bean mix, drained, rinsed
  • 18.20 gm extra virgin olive oil
  • 2 large naan breads
  • 1 avocado, thinly sliced
  • 2 tsp lemon and herb dukkah
  • 50g fetta, crumbled
  • 40.00 ml drained sun-dried tomato strips
  • 15g baby rocket
Instructions:
  • Preheat your oven to 200C/180C fan-forced, then line a baking tray with parchment paper.
  • Transfer the beans to a bowl and delicately mash them until they are nearly smooth, leaving a slight bit of texture. Mix in the oil and then generously season with salt and pepper.
  • Lay the naan on a baking tray. Spread generously with the bean mixture. Top it with ripe avocado, flavorful dukkah, and crumbled feta. Bake for 12 to 15 minutes until warm and crispy. Serve the naan topped with vibrant sun-dried tomatoes and fresh rocket leaves.
