Whipped avocado and feta on toast: Quick, nutritious, and delicious breakfast option.
Ingredients:
  • 80g Danish style feta, crumbled
  • 2 small firm ripe avocados, stone removed, peeled
  • 40.00 ml chopped fresh mint, plus extra to garnish
  • Squeeze of fresh lemon juice
  • 4 large slices rye bread
Instructions:
  • Combine the avocado in a medium bowl, mashing it roughly with a fork. Mix in mint and squeeze a generous amount of lemon juice, then continue mashing until blended. Season with salt and freshly ground black pepper to taste.
  • Toast or grill rye bread until beautifully golden. Spread 1/4 of the avocado mixture on each slice of bread. Crumble feta over the top and garnish with extra mint before serving. Optional: enhance with thinly shaved ham or a poached egg. Serve immediately.
