Try this mouthwatering Middle Eastern flatbread for a delightful brunch.
Ingredients:
  • 1 teaspoon cumin seeds
  • 250 g wholemeal self-raising flour plus extra for dusting
  • ¾ teaspoon baking powder
  • 350 g plain yoghurt
  • olive oil
  • 2 ripe avocados
  • 75 g feta cheese
  • 1 teaspoon rose harissa
Instructions:
  • Toast cumin in a dry pan until fragrant, then transfer to a bowl. Combine toasted cumin with flour, baking powder, seasoning, and 250g of yoghurt to make a rough dough. Knead dough on a floured surface until it comes together. Place in a greased bowl, cover with a damp tea towel, and set aside. Peel, pit, and chop avocado into chunks. Mix with crumbled feta, a drizzle of oil, and season to taste. In a separate bowl, stir harissa into the remaining yoghurt. Divide dough into eight balls and roll each into a 3mm thick oval shape. Grill on a hot griddle for 2 to 3 minutes per side, until puffed up and charred. Brush with oil and serve with avocado salad and harissa yoghurt.
