Aubergine flatbreads

Delicious Greek-inspired flatbread with quick dough and flavorful blackened aubergines for a tasty lunch.
Ingredients:
  • 1 large aubergine (400g)
  • 200 g self-raising flour plus extra for dusting
  • 10 mixed marinated olives
  • 2 sprigs or 1 heaped teaspoon dried flowering oregano
  • 50 g feta cheese
Instructions:
  • Pierce the aubergine and char over a direct flame until soft inside. Let it cool. Mix flour and a pinch of salt with 100ml water. Knead the dough, rest briefly, then roll into oval shapes. Cook the flatbreads in batches until golden. Chop the olives. Combine aubergine flesh with olive oil, vinegar, oregano, salt, and pepper. Spread on flatbreads. Sauté olives in oil, then top aubergine. Add crumbled feta and oregano on top.
