Upgrade your grilled cheese with avocado, tomato, and bacon for a delicious dinner ready in just 20 minutes! Perfectly crispy bacon, melty cheddar cheese, and fresh avocado, tomato, and onion create a mouthwatering comfort meal. Enjoy a stack of these gourmet sandwiches that are guaranteed to impress.
Ingredients:
  • 2 cups shredded Cheddar cheese (8 oz)
  • 8 slices white or whole wheat bread
  • 1 small onion, chopped (1/3 cup)
  • 8 slices bacon, crisply cooked
  • 1 medium tomato, thinly sliced
  • 1 medium avocado, pitted, peeled and thinly sliced
  • 1/3 cup butter, softened
Instructions:
  • Sprinkle 1/4 cup of cheese on each of the 4 bread slices. Divide the onion, bacon, tomato, and avocado evenly among the bread slices. Top with the remaining cheese and another slice of bread. Spread 2 teaspoons of butter over each top slice of bread.
  • In a 12-inch skillet over medium heat, place the sandwiches with the buttered side down. Spread the remaining butter over the top slices of bread. Cook uncovered for about 5 minutes until the bottoms are golden brown. Flip and cook for an additional 2 to 3 minutes until the bottoms are golden brown and the cheese is melted.
