Wake up to crispy corn fritters topped with creamy avocado, fresh cherry tomatoes, and crispy bacon.
Ingredients:
  • 160g corn cob
  • 115g self-raising flour
  • 2 eggs, lightly whisked
  • 80ml buttermilk
  • 4 rashersshortcut bacon
  • 4.60 gm olive oil
  • 1 ripe avocado, stone removed, peeled, mashed
  • 200g cherry tomatoes, quartered
Instructions:
  • Boil corn in a small saucepan for 2 minutes until heated through. Then, refresh in cold running water and drain well.
  • In a large bowl, mix the flour. In a small bowl, combine the eggs and buttermilk. Pour the egg mixture into the flour and stir together. Then, mix in the corn.
  • Preheat a large frying pan over high heat. Add bacon slices and cook for 2 minutes on each side until they are crispy. Transfer to a plate.
  • If needed, heat oil in a pan. Spoon four 2-tablespoon portions of corn mixture at the edge of the pan. Cook for 1-2 minutes until bubbles appear and fritters are golden brown underneath. Flip and cook for an additional 1-2 minutes until cooked through. Transfer to a plate. Repeat with remaining batter.
  • Serve corn fritters on plates, generously top with creamy avocado and crispy bacon, then drizzle with flavorful tomato sauce. Enjoy while hot.
