Delicious corn fritters topped with vibrant tomato and avocado salsa, perfect for brunch or any weeknight meal!
Ingredients:
  • 420g can creamed corn
  • 420g can corn kernels, rinsed, drained
  • 2 Free Range Eggs, lightly whisked
  • 150g self-raising flour
  • 4 bacon rashers
  • 200g cherry tomatoes, quartered
  • 1 avocado, stoned, peeled, coarsely chopped
  • 21.00 gm lime juice
Instructions:
  • In a large bowl, mix together creamed corn, corn kernels, and egg. Add flour and mix well. Pour in the milk and season to taste.
  • In a large non-stick frying pan, heat 1 teaspoon of oil over medium-low heat. Pour three 1/4-cup portions of the mixture into the pan, leaving space for spreading. Cook for 2 minutes or until bubbles form on the surface. Flip and cook for another 2 minutes until golden and cooked through. Transfer to a plate, cover with foil, and repeat with the remaining oil and batter in 3 more batches.
  • Turn up the heat to high and sear the bacon in the pan for 2 minutes on each side until crispy. Then, place the bacon on a plate lined with paper towel to absorb any excess oil.
  • In a small bowl, mix together the tomato, avocado, and lime juice. Season to taste.
  • Plate the fritters and bacon evenly on serving plates, then generously spoon the tomato mixture on top. Finish with a sprinkle of freshly ground pepper.
