Chef John's irresistible fried chicken sandwich combines the best of Popeyes® and Chick-fil-A® in one delectable bite.
Ingredients:
  • 1 cup buttermilk
  • 2 teaspoons kosher salt
  • 1 dash hot sauce, or to taste
  • 1 tablespoon dry ranch dressing mix (such as Hidden Valley Ranch®)
  • 4 (5 ounce) skinless, boneless chicken breast halves
  • 1.3333333730698 cups all-purpose flour
  • 0.5 teaspoon freshly ground black pepper
  • 1.5 teaspoons cayenne pepper
  • 1 large egg, beaten
  • 0.5 cup buttermilk
  • 0.25 cup milk
  • canola oil for frying
  • 4 soft hamburger buns, toasted and buttered
  • 6 tablespoons mayonnaise, or to taste
  • 12 dill pickle slices, or to taste
Instructions:
  • In a large bowl, combine buttermilk, salt, hot sauce, and ranch dressing mix, whisking until smooth. Make diagonal slits in the thick ends of chicken breasts and coat them well in the marinade. Refrigerate and marinate for 2 to 4 hours.
  • Combine flour, cornstarch, salt, pepper, cayenne, and ranch dressing mix in a shallow dish for the breading.
  • Prepare the wash by thoroughly whisking together egg, buttermilk, and milk in a separate bowl until well blended.
  • Using a fork, remove chicken from marinade allowing excess to drip off. Coat both sides with breading, shaking off any extra. Dip into egg wash, coat with breading, shake off excess, and repeat. Place on wire rack to dry for at least 15 minutes.
  • Preheat the oil in a deep-fryer to a perfect 350-375 degrees F (175-190 degrees C).
  • Cook the chicken breasts in hot oil until they are golden, crispy, and cooked through, about 4 to 5 minutes, flipping them halfway through. Place them on a plate lined with crinkled aluminum foil to keep the bottoms crispy.
  • Spread the creamy mayonnaise on the hamburger bun halves, then generously stuff them with flavorful pickles and juicy chicken.
