Make crispy copycat Chick-fil-A sandwiches with spiced, fried chicken breasts.
Ingredients:
  • 3 skinless, boneless chicken breast halves
  • 12 dill pickle slices, with brine
  • peanut oil for frying
  • 1 cup all-purpose flour
  • 2 tablespoons powdered sugar
  • 1 teaspoon salt
  • paprika
  • 0.5 teaspoon celery salt
  • 0.5 teaspoon dried basil
  • 2 large eggs
  • milk
  • 2 tablespoons butter, softened
  • 6 sandwich buns
Instructions:
  • Flatten each chicken breast between plastic sheets on a sturdy surface using a meat mallet. Cut each breast in half, then transfer to a bowl and cover with pickle brine. Allow to marinate for 1 hour.
  • Mix together flour, powdered sugar, salt, paprika, pepper, celery salt, and basil in a bowl.
  • Combine eggs and milk, whisk until smooth.
  • Strain the juice from the chicken and give it a quick rinse. Pat the chicken dry to remove any leftover liquid.
  • Preheat oil in a deep-fryer or large skillet to 350 degrees F (175 degrees C) until hot.
  • Coat each chicken piece in flour, then in egg-milk mixture, and finish by coating in flour again. Repeat the dipping process for extra crispiness, if desired.
  • Golden fry the chicken pieces in batches until they are cooked through and reach an internal temperature of 165 degrees F (74 degrees C).
  • Allow the chicken to rest on a cooling rack over a baking sheet for 5 minutes. In the meantime, butter the sandwich buns lightly and toast them in a skillet.
  • Place 2 pickle slices on each bun, followed by a piece of chicken, and top with the other bun. Repeat this process to prepare the rest of the sandwiches.
