Crispy chicken sandwiches with spicy sriracha mayo and pickles.
Ingredients:
  • 1.5 cups all-purpose flour, divided
  • 0.25 cup ranch dressing mix (such as Hidden Valley®)
  • 2 chicken breasts
  • 0.5 cup mayonnaise
  • 0.25 cup sriracha sauce
  • 4 potato rolls
  • 16 dill pickle chips
Instructions:
  • Heat your oven to 350 degrees F (175 degrees C).
  • Pour 1/2 cup of flour into a small bowl.
  • Whisk egg in a shallow bowl using a fork.
  • Combine 1 cup flour with ranch dressing in a bowl.
  • Cut each chicken breast into 4 pieces. Dredge each piece in plain flour, then dip in egg, and coat with a mixture of flour and ranch seasoning. Place the coated pieces on a wire rack set over a baking sheet with a rim.
  • Begin by heating oil in a large saucepan until it shimmers. Add 2 pieces of chicken and fry until they turn a beautiful golden color, flipping once, for approximately 5 minutes. Transfer the cooked chicken back to the wire rack and proceed with the remaining 2 pieces in the same manner.
  • Cook the chicken in the preheated oven until the juices run clear, approximately 10 minutes.
  • Combine creamy mayonnaise with spicy sriracha sauce in a small bowl. Slather the mixture onto soft rolls. Top each roll with 4 tangy pickle slices and a piece of savory chicken.
