Mouthwatering fried chicken sandwiches with Buffalo heat and cool ranch dressing, loaded with fresh veggies.
Ingredients:
  • 3 (8 ounce) skinless, boneless chicken breast halves
  • 0.66666668653488 cup buttermilk
  • 1 tablespoon Buffalo sauce
  • 1.5 teaspoons garlic powder
  • 1 cup all-purpose flour
  • 1 teaspoon poultry seasoning
  • 0.25 teaspoon ground black pepper
  • 0.25 cup canola oil, or as needed
  • 6 hamburger buns
  • 2 tablespoons Buffalo sauce, or to taste
  • 0.5 cup sliced pickles
  • 6 slices tomato
  • 6 leaves lettuce, or more to taste
  • 3 tablespoons ranch dressing, or more to taste
Instructions:
  • Thinly slice each chicken breast into 2 fillets each. Combine the 6 fillets with buttermilk, 1 tablespoon Buffalo sauce, and garlic powder in a zip-top bag. Seal the bag and shake well to evenly coat the chicken. Chill in the refrigerator for at least 2 hours, or for a tastier result, overnight.
  • Preheat the oven to 350°F (175°C) to get it nice and hot for your cooking adventure.
  • In a shallow dish or pie plate, mix flour, poultry seasoning, and pepper together using a fork or whisk until well combined.
  • Remove the marinated chicken, shake off excess, and coat evenly in the breading mixture on both sides. Discard any leftover marinade.
  • Heat a generous amount of oil in a large skillet over medium-high heat until hot but not smoking. Cook 2 chicken fillets at a time until crispy and golden brown, about 2 to 3 minutes per side. Drain on paper towels and repeat with remaining chicken, adding more oil as needed. Transfer to a baking sheet.
  • Roast chicken in the preheated oven until fully cooked and juices run clear, about 8 to 10 minutes. Use an instant-read thermometer to ensure the internal temperature reaches 165 degrees F (74 degrees C).
  • Take the chicken out of the oven. Place a chicken fillet on the bottom half of a bun. Drizzle Buffalo sauce to your liking. Layer pickle slices, tomato, and lettuce on top. Spread ranch dressing on the inside of the top bun and assemble the sandwich. Repeat for the remaining sandwiches.
