Crispy double-fried buffalo wings seasoned to perfection in this easy restaurant-style recipe.
Ingredients:
  • 2 tablespoons ground paprika
  • 1 tablespoon ground black pepper
  • 1 tablespoon chili powder
  • 1 tablespoon seasoned salt
  • 2 teaspoons cayenne pepper
  • 1.5 teaspoons onion powder
  • 1.5 teaspoons garlic powder
  • 1 teaspoon ground white pepper
  • 1 teaspoon mustard powder
  • 2 cups vegetable oil, or as needed
  • 2 cups peanut oil, or as needed
  • 2 pounds chicken wings
Instructions:
  • Prepare the seasoning mix by mixing paprika, black pepper, chili powder, seasoned salt, cayenne pepper, onion powder, garlic powder, white pepper, and mustard powder in a bowl until well combined.
  • Prepare the chicken wings by ensuring they are completely dry with a paper towel. Heat a blend of vegetable oil and peanut oil in a deep cast iron or heavy pot over medium heat until it reaches 300 degrees F (150 degrees C).
  • Fry chicken in two separate batches in hot oil for 4 to 5 minutes each until golden brown. Place on a paper towel-lined plate to drain.
  • Heat the oil to 350 degrees F (175 degrees C. Fry the chicken in two batches until the skin is crispy and golden brown and the meat is no longer pink in the center, which should take about 5 to 6 minutes each. Once done, drain on a paper towel-lined plate and transfer to a large bowl.
  • Evenly coat the chicken by sprinkling the seasoning mix and tossing it gently.
