Transform potatoes using microwave, fry, bake for a crispy, cheesy delight.
Ingredients:
  • 6 potatoes
  • 1 cup vegetable oil
  • 8 ounces shredded Cheddar cheese
  • 0.125 cup bacon bits
  • 1 (16 ounce) container sour cream
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and lightly grease a 9x13 inch baking pan.
  • Gently prick potatoes with a fork. Microwave on high until tender, about 10 to 12 minutes.
  • Halve the potatoes vertically and carefully scoop out the insides, leaving a 1/4-inch potato shell.
  • Preheat oil to 365 degrees F (180 degrees C in a deep fryer or deep saucepan. Fry potatoes for 5 minutes until golden brown. Remove and drain on paper towels.
  • Stuff the potato shells with a generous amount of cheese and crispy bacon pieces, then neatly place them in the baking pan.
  • Bake until the cheese is gooey and bubbly, about 7 minutes. Serve piping hot with a dollop of sour cream on top.
