Create flawless restaurant-style mashed potatoes with this easy guide.
Ingredients:
  • 1kg brushed potatoes, peeled, quartered
  • 80ml thickened cream
  • 60ml milk
  • 50g butter, chopped
Instructions:
  • Begin with a floury potato like Red Royale. Place in a saucepan, cover with cold water, and bring to a boil over high heat. Reduce heat to medium and cook for 15 minutes until the potato is very tender.
  • Drain the potato in a colander to allow steam to evaporate for 5 minutes, reducing excess water. To avoid a watery mash, ensure the potato is not too wet. In a saucepan over medium heat, heat the cream and milk until almost boiling.
  • Place the cooked potato back in the pan and use a potato masher, fork, or potato ricer to mash until smooth. Stir in the melted butter until absorbed, then add the cream mixture and continue mashing until smooth. Cook over low heat, stirring occasionally, for 2-3 minutes until heated through.
