Creamy Yukon Gold potatoes make the perfect vessel for rich turkey gravy or melted butter.
Ingredients:
  • 3 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 2 teaspoons salt, divided
  • 4 ounces cream cheese, softened
  • 0.33333334326744 cup butter
  • 0.33333334326744 cup half-and-half
  • 0.75 teaspoon coarsely ground black pepper
Instructions:
  • In a medium Dutch oven, boil potatoes and 1 teaspoon of salt in cold water over medium-high heat until tender, about 16 to 20 minutes. Drain and set aside.
  • Place potatoes back in the pot and cook until water evaporates, about 3 minutes. Arrange potatoes to one side of the pot and add cream cheese, butter, and half-and-half to the other side. Cook until butter melts and mixture starts to boil, 1 to 2 minutes.
  • Take the mixture off the heat and use a hand-held electric mixer to achieve your preferred smoothness for about 30 seconds to 1 minute; avoid overmixing. Serve promptly.
