Creamy Yukon gold mashed potatoes with tangy yogurt, irresistibly light and creamy with virtually no fat!
Ingredients:
  • 3 lb unpeeled Yukon gold potatoes (about 8 medium), cut into 1-inch pieces
  • 1 tablespoon butter or olive oil
  • 1/2 teaspoon salt
  • 1 container (6 oz) Greek Fat Free plain yogurt
  • 1/4 teaspoon fresh ground black pepper
  • 2 tablespoons chopped fresh chives, if desired
Instructions:
  • In a 3-quart saucepan, add potatoes and enough water to cover them. Bring to a boil, then reduce heat to low, cover, and simmer for 15 to 20 minutes until potatoes are fork-tender. Drain potatoes.
  • Combine potatoes, butter, and salt in the same saucepan and use a potato masher to achieve a lumpy texture. Gradually mix in yogurt, continuing to mash until well blended but still retaining some lumps. Finally, stir in pepper and chives.
