Indulgent creamy garlic mashed potatoes made with Yukon Golds and sour cream - the perfect buttery side dish for any meal.
Ingredients:
  • 1 cup butter
  • 2 whole heads garlic, top third sliced off and discarded
  • olive oil
  • 1 tablespoon sea salt
  • 5 pounds Yukon Gold potatoes, peeled and cubed
  • 1 cup sour cream
  • 1 (4 ounce) package cream cheese
  • salt and ground black pepper to taste
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • In a baking dish, generously coat garlic heads with a tablespoon of premium olive oil each.
  • Roast in the oven until garlic is tender and golden brown, approximately 45 minutes.
  • While you wait, heat a large pot of salted water until it boils, then add sea salt. Boil potatoes until tender, approximately 30 minutes. Drain well.
  • In a big bowl, combine potatoes with sour cream, butter, cream cheese, salt, and black pepper. Cover the bowl and let it sit for 5 minutes to allow the butter and cream cheese to soften.
  • Add the roasted garlic cloves to the potato mixture and thoroughly mash until the potatoes are smooth, creamy, and well combined.
