Sour Cream Mashed Potatoes

Creamy garlic mashed potatoes.
Ingredients:
  • 3 pounds Yukon Gold potatoes, peeled and cut into 2-inch chunks
  • 1.5 tablespoons kosher salt
  • 0.5 cup salted butter, cubed
  • 4 large cloves garlic, crushed
  • 1 cup whole milk, warmed
  • 1 cup sour cream
  • 6 tablespoons unsalted butter, cubed
  • 2 teaspoons kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons thinly sliced scallions
Instructions:
  • In a large stock pot, combine potatoes with 1 1/2 tablespoons of salt. Cover potatoes with cold water by 2 inches. Bring to a boil over high heat, then simmer until fork-tender, about 15 minutes.
  • In a small saucepan over low heat, gently melt salted butter with garlic until the garlic is fragrant and the milk solids have separated from the butter, stirring occasionally. Cover to keep warm once done.
  • Drain the potatoes in a colander and then return them to the pot. Add milk, sour cream, unsalted butter, 2 teaspoons of salt, and pepper.
  • Achieve a velvety texture by gently mashing with a potato masher. Be sure not to over-mash to prevent a sticky consistency. Serve in a beautiful bowl.
  • Strain the garlic butter through a fine mesh sieve into a small bowl, separating and setting aside the milk solids and garlic.
  • Drizzle melted butter atop creamy mashed potatoes and garnish with fresh scallions.
