Creamy mashed potatoes with cream cheese, sour cream, and butter. Perfect make-ahead side dish.
Ingredients:
  • 9 large potatoes
  • 1 (8 ounce) package cream cheese
  • 1 cup sour cream
  • 2 tablespoons butter
  • 0.25 cup minced green onions
  • salt and ground black pepper, to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 1 1/2-quart baking dish.
  • In a large pot, add potatoes and cover with salted water. Bring to a boil, then simmer on medium-low heat for about 20 minutes until potatoes are tender. Drain the potatoes.
  • Mash the potatoes in the pot until smooth using a potato masher or fork. Add cream cheese, sour cream, butter, green onions, salt, and pepper, and mix well. Transfer the mixture to a prepared baking dish.
  • Bake in a preheated oven until beautifully golden and bubbly, for around 1 1/2 hours.
