Ingredients:
  • 5 medium russet potatoes, scrubbed and quartered
  • 1 (8 ounce) package cream cheese, softened
  • 2 tablespoons milk
  • 1 tablespoon salted butter
Instructions:
  • In a large pot, submerge potatoes in salted water and bring to a vigorous boil. Reduce heat to medium-low and gently simmer until potatoes are tender, roughly 20 minutes. Drain and transfer to a bowl.
  • Add cream cheese, milk, butter, and salt to the hot steaming potatoes. Combine with an electric hand mixer until smooth and creamy.
