Make-ahead mashed potatoes with sour cream and cheese: moist, creamy, and hassle-free. Just reheat in the oven when you're craving comfort.
Ingredients:
  • 5 pounds potatoes, peeled and cubed
  • 6 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 tablespoon freeze-dried chives
  • salt and pepper to taste
  • 0.125 teaspoon paprika
  • 0.25 cup butter
Instructions:
  • In a large pot, cook potatoes in boiling salted water until tender, about 20 minutes. Drain well. Mash potatoes with cream cheese, sour cream, chives, salt, and pepper until smooth using an electric mixer. Transfer to a storage container and chill with the lid off in the refrigerator. Once cold, cover tightly with a lid.
  • Preheat your oven to 350°F (175°C). Grease a baking dish, spread your potatoes, sprinkle with paprika, add butter, and bake for 30 minutes until heated through. Enjoy within 10 days.
