Sweet potato casserole with oatmeal, brown sugar, and marshmallow streusel - a delightful rendition of sweet potato pie.
Ingredients:
  • 2.5 pounds sweet potatoes
  • 1 teaspoon vegetable oil, or as needed
  • 0.75 cup dark brown sugar
  • 0.5 cup heavy whipping cream
  • 0.25 cup melted butter
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.25 cup rolled oats
  • 2 teaspoons dark brown sugar
  • 1 tablespoon all-purpose flour
  • 0.125 teaspoon ground cinnamon
  • 2 tablespoons cold butter
  • 2 cups miniature marshmallows
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Coat each sweet potato in vegetable oil and then place them on a baking sheet.
  • Bake in the oven until tender, about 1 hour. Remove and cool slightly. Reduce oven temperature to 350 degrees F (175 degrees C).
  • Once the sweet potatoes have cooled, scoop out the flesh into a large bowl, leaving the skins behind. Use an electric mixer to beat the sweet potatoes until smooth.
  • In a large bowl, combine 6 cups of mashed sweet potato, 3/4 cup brown sugar, a splash of cream, 1/4 cup melted butter, 1/4 teaspoon cinnamon, and a pinch of salt. Transfer the sweet potato mixture to an 8x8-inch baking dish.
  • Pulse rolled oats in a food processor or blender until finely ground. Combine ground oats with 2 tablespoons brown sugar, flour, and 1/8 teaspoon cinnamon in a bowl. Cut 2 tablespoons cold butter into the mixture using a pastry blender or fork until crumbly. Sprinkle the mixture evenly over the sweet potato mixture.
  • Bake in the oven until sweet potatoes are warmed and oatmeal streusel is lightly golden, for 70-80 minutes. Remove from oven, add marshmallows, and let sit until they are melted, for about 10 minutes.
