Recreate restaurant-style country pancakes with a delicious twist by incorporating sweet potato and banana.
Ingredients:
  • 1 sweet potato, cubed
  • 0.5 cup milk
  • 0.5 cup oats, ground to flour
  • 2 scoops vanilla protein powder
  • 0.25 cup flax seeds
  • 2 teaspoons pumpkin pie spice (such as Trader Joe's®)
  • 0.5 teaspoon baking powder
  • 1 large banana, sliced
  • 2.5 tablespoons almonds
  • 2.5 tablespoons pecans
  • 2.5 tablespoons walnuts
  • 2 tablespoons coconut oil, or as needed
Instructions:
  • Fill a pot with water and bring it to a rolling boil. Add sweet potato and bring it back to a boil. Cook until sweet potato is tender, about 7 to 10 minutes. Drain.
  • Mash sweet potato in a small bowl using a fork until smooth.
  • In a bowl, combine 1 cup mashed sweet potato, eggs, milk, oat flour, protein powder, flax seeds, pumpkin pie spice, and baking powder. Gently fold in banana, almonds, pecans, and walnuts until well mixed.
  • Heat coconut oil in a skillet until melted over medium heat. Pour in enough batter to make a 4- to 6-inch pancake. Cook until golden brown on both sides, 3 to 5 minutes each.
