Make delicious chicken nachos with crispy tortilla chips topped with shredded chicken, zesty salsa, juicy tomatoes, and melted cheese. Perfect for sharing or as a tasty snack!
Ingredients:
  • 3 tablespoons canola oil
  • 6 green onions, sliced, white parts and tops separated
  • 2 cloves garlic, crushed
  • 1 shredded, cooked, whole chicken breast
  • salt and pepper to taste
  • 1 cup salsa
  • 0.5 (12 ounce) package tortilla chips
  • 1 (8 ounce) package shredded Cheddar/Monterey Jack cheese blend
  • 0.5 large tomato, diced
Instructions:
  • Collect all the ingredients needed while preheating the oven to 350 degrees F (175 degrees C).
  • In a deep 12-inch skillet over medium heat, sauté the white parts of the green onions and garlic in oil until the onions are just tender.
  • Combine shredded chicken with a pinch of salt and pepper, ensuring it's evenly coated. Mix in the salsa.
  • Spread out a layer of tortilla chips on a large baking sheet. Pile on the chicken mixture, then sprinkle generously with shredded cheese and tomato slices.
  • Place the dish in the oven until the gooey melted cheese bubbles, for approximately 10 minutes. Once done, add a sprinkle of fresh green onion on top before enjoying.
