Chicken Parmesan with Linguine

Recreate a delicious restaurant-style chicken dish at home!
Ingredients:
  • 1/2 cup Fiber One™ original bran cereal
  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon garlic salt
  • 1 egg white
  • 2 teaspoons fat-free milk
  • 1 lb boneless skinless chicken breasts, cut into 1-inch-thick strips
  • 1 tablespoon canola or olive oil
  • 6 oz uncooked whole grain or regular linguine
  • 2 cups Muir Glen™ organic garden vegetable pasta sauce
  • Chopped fresh parsley, if desired
Instructions:
  • Preheat oven to 400°F. Line a 15 x 10 x 1-inch pan with foil and lightly spray with cooking spray. Place cereal in a resealable plastic bag, seal, and crush finely using a rolling pin, meat mallet, or food processor.
  • Combine cereal, cheese, Italian seasoning, and garlic salt in one bowl. Whisk together egg white and milk in another bowl. Dip chicken in egg white mixture, then coat generously with cereal mixture. Arrange coated chicken in a pan and drizzle with oil.
  • Bake for 15-20 minutes, or until the chicken is crispy and fully cooked through.
  • Cook linguine according to package instructions, then drain. Heat pasta sauce in a saucepan over medium heat until hot.
  • Transfer the drained linguine to a serving platter and layer with pasta sauce and chicken. Finish by sprinkling with fresh parsley.
