Pesto linguine with chicken & zucchini

Quick and flavorful pesto chicken with parmesan, perfect for a stress-free family meal, ready in just 25 minutes!
Ingredients:
  • 400g linguine
  • Olive oil spray
  • 1 (about 300g) single chicken breast fillet, thinly sliced
  • 2 zucchini, trimmed, thinly sliced diagonally
  • 80g (1/3 cup) bought basil pesto
  • 125.00 ml fresh basil leaves, coarsely torn
  • 20g (1/4 cup) coarsely grated parmesan
Instructions:
  • Boil pasta in a large pot of salted water until al dente according to package instructions. Drain and transfer back to the pot.
  • Heat a large non-stick frying pan over medium-high heat and spray with olive oil. Cook the chicken for 2 minutes on each side until done, then transfer to a plate. Increase heat to high, add zucchini and garlic, and cook for 2 minutes until zucchini is tender, stirring occasionally.
  • Combine the chicken, zucchini mixture, pesto, and basil with the pasta, toss to mix. Serve in bowls, sprinkle with parmesan on top.
