Gluten-free chicken Parmesan with zucchini noodles, marinara, and cheese.
Ingredients:
  • 4 zucchini, cut into spirals using a spiral slicer
  • 1 tablespoon Italian seasoning
  • 4 skinless, boneless chicken breast halves
  • salt and ground black pepper to taste
  • 1 cup marinara sauce
  • cooking spray
  • 4 slices mozzarella cheese
  • 0.25 cup freshly grated Parmesan cheese, or to taste
Instructions:
  • Prepare a baking sheet by lining it with parchment paper.
  • Place zucchini spirals in a colander and generously season with 1 teaspoon of salt and aromatic Italian seasoning. Toss well to ensure every spiral is coated in delicious flavors, then set the colander over a bowl to let the excess water drain away.
  • Cover chicken with plastic wrap and gently pound it into a 1/4- to 1/2-inch thickness. Unwrap and season liberally with salt and pepper.
  • Simmer marinara sauce gently in a saucepan over low heat.
  • Spray a nonstick skillet with cooking spray and heat over medium-high heat. Brown the chicken on both sides until fully cooked, about 4 to 5 minutes per side. Transfer the chicken to a baking sheet.
  • Position the oven rack 6 inches below the broiler and preheat the broiler.
  • Sauté zucchini in a nonstick skillet over medium-high heat, stirring occasionally, until just tender, about 3 to 4 minutes.
  • Cover each chicken breast with a generous spoonful of marinara sauce and a sprinkle of mozzarella cheese.
  • Broil chicken in the oven until cheese is gooey and melted, for about 1 to 2 minutes.
  • Plate the zucchini, then arrange the chicken on top. Drizzle each piece of chicken with warm marinara and sprinkle with Parmesan cheese.
