Crispy Restaurant-Style Hash Browns

Crispy shredded potatoes cooked in a cast iron pan for restaurant-quality hash browns.
Ingredients:
  • 3 medium russet potatoes, peeled and shredded
  • 0.5 medium yellow onion, chopped
  • 0.25 cup all-purpose flour
  • salt and ground black pepper to taste
  • 1 large egg
  • 0.5 cup vegetable oil
Instructions:
  • Rinse shredded potatoes in a colander under cold water until water is clear. Wrap in cheesecloth or clean dish towel and twist tightly to remove all moisture.
  • Combine the potatoes, onion, flour, salt, and pepper in a bowl. Mix in the egg until thoroughly combined.
  • In a shallow, cast iron frying pan, heat oil. Form the potato mixture into one large pancake or several smaller ones and place in the hot oil. Cook until crispy and golden brown, about 5 minutes on each side. Drain on a paper towel, then serve hot.
