Cozy chicken dumpling soup recipe for a comforting meal.
Ingredients:
  • 1 (3 pound) whole chicken
  • 1 onion, quartered
  • 2 slices lemon
  • salt and pepper to taste
  • 3 cups water
  • 1 bay leaf
  • 0.5 teaspoon dried thyme
  • 2 cups all-purpose flour
  • 3 tablespoons shortening
  • 0.25 cup water
Instructions:
  • Place the chicken, onion, lemon, salt, pepper, water, bay leaf, and thyme in a heavy pot with a lid. Simmer over low heat for about 1 hour until tender.
  • Allow the chicken to cool in the pot for a bit and then shred the meat off the bones. Remove and discard the bones and skin, and skim any excess fat off the broth if preferred. Also, discard the onion, lemon, and bay leaf. Optionally, give the pot a good wash. Return the chicken and broth to the pot and simmer gently while preparing the dumplings.
  • Prepare Dumplings: Combine shortening, flour, and salt in a medium mixing bowl until crumbly. Add 1/4 cup water (or more if needed) to create a soft dough. Roll out thinly on a floured surface using a rolling pin. Cut into 1-inch wide strips with a pizza cutter or knife, then tear into 1-inch pieces. Add to simmering broth and chicken, cooking uncovered for 10 minutes and covered for another 10. Serve hot.
