Electric Pressure Cooker Chicken and Dumplings

Irresistible Southern-style chicken and dumplings - a cozy favorite that will keep you craving another bite!
Ingredients:
  • 1 large chicken breast
  • 1 tablespoon paprika
  • 2 teaspoons garlic powder
  • 1.5 teaspoons salt
  • 1.5 teaspoons ground black pepper
  • 4 cups chicken stock, divided
  • 2 (12 ounce) packages frozen dumpling wrappers
  • 2 cups cream of chicken soup
  • 1.5 cups frozen peas and carrots
  • salt and ground black pepper to taste
Instructions:
  • Rub the chicken with paprika, garlic powder, salt, and black pepper. Place the seasoned chicken breast in an electric pressure cooker with 2 cups of stock. Seal the lid, select the Stew function, and set the timer for 25 minutes. Let the pressure build for 5 to 10 minutes.
  • Carefully quick-release pressure as per manufacturer's instructions for approximately 5 minutes. Remove lid and transfer chicken to a cutting board. Switch pressure cooker to Saute function and bring broth to a boil. Shred chicken using 2 forks.
  • Gently drop frozen dumpling wrappers into the broth, stirring occasionally to ensure they don't stick. Mix in shredded chicken, cream of chicken soup, and the rest of the stock in the pressure cooker. Season with salt and pepper. Secure the lid, set the pressure cooker to Stew function, and cook for 10 minutes. Let the pressure build for 5 to 10 minutes.
  • Follow the manufacturer's natural-release method for 10 to 40 minutes. Unlock the lid, then stir in peas and carrots and let them warm through for 1 to 2 minutes.
