Quick and delicious sweet acorn squash cooked in just 25 minutes in an electric pressure cooker.
Ingredients:
  • 2 tablespoons brown sugar
  • 2 tablespoons maple syrup
  • 1 tablespoon butter
  • 0.5 teaspoon ground cinnamon
  • 1 medium acorn squash, halved and seeded
Instructions:
  • Distribute sugar, maple syrup, butter, and cinnamon evenly among both halves of acorn squash.
  • Pour 1 cup of water into your electric pressure cooker, like an Instant Pot®. Place the trivet inside, then gently set the squash halves on top. Secure the lid and seal the pressure valve.
  • Follow manufacturer's instructions to set High pressure. Set timer for 5 minutes and patiently wait for 10-15 minutes for pressure to build.
  • Allow the pressure to release naturally for about 7 minutes. Then, follow the manufacturer's instructions to release any remaining pressure. Unlock the lid, delicately take out the squash, and serve.
