Instant Pot sweet potato soup with a spicy, smoky chipotle kick.
Ingredients:
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 1.5 pounds sweet potatoes, peeled and cut into 1 1/2-inch pieces
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground chipotle pepper, or more to taste
  • salt to taste
  • 3 teaspoons vegetable bouillon base (such as Better Than Bouillon®)
  • 3 cups hot water
  • 0.5 cup fresh orange juice
  • 0.33333334326744 cup heavy cream
Instructions:
  • Preheat Instant Pot® using Saute function, then heat olive oil. Saute onion and garlic for 1 to 2 minutes. Add sweet potatoes, smoked paprika, chipotle pepper, and salt. Stir for 1 minute before turning off cooker.
  • Combine vegetable bouillon with hot water, then pour into the pot along with the orange juice, making sure to scrape up any flavorful browned bits from the bottom. Close and lock the lid, select high pressure, and set the timer for 10 minutes following the manufacturer's instructions. Wait for 10 to 15 minutes for the pressure to build up.
  • Carefully quick-release pressure following manufacturer's instructions for about 5 minutes. Unlock and remove the lid.
  • Use an immersion blender to create a velvety texture for the soup. Add heavy cream and give it a good stir. Taste to perfection, adjusting salt if necessary.
