Quick and hearty sweet potato soup made in the Instant Pot®, ready in just 30 minutes.
Ingredients:
  • 1 tablespoon salted butter
  • 0.5 cup chopped onion
  • 1 (10 ounce) bag Sweet potato, raw
  • 1.5 cups chicken broth
  • 2 tablespoons heavy cream
  • 1 teaspoon chopped fresh thyme
Instructions:
  • Heat up the multi-functional pressure cooker on the Saute function. Sauté butter and onion until onion is soft and translucent, for about 5 minutes. Stir in minced garlic for the last 30 seconds until fragrant. Add sweet potato cubes and pour in chicken broth. Stop the Saute function.
  • Securely seal the lid and set the pressure to high as per the manufacturer's guidelines. Cook under pressure for 6 minutes. Let the pressure naturally release for 10 to 15 minutes.
  • Carefully quick-release pressure following manufacturer's instructions. Remove lid and add heavy cream, salt, and pepper to soup. Stir well, garnish with fresh thyme, and serve.
