Creamy, chunky Instant Pot rutabaga mash - a quick, delicious, and lower-carb alternative to mashed potatoes.
Ingredients:
  • 1 cup water
  • 2 pounds rutabaga, peeled and chopped into 1-inch cubes
  • 0.25 cup half-and-half
  • 1 tablespoon butter
  • 0.75 teaspoon salt
  • 0.25 teaspoon pepper
  • 0.25 teaspoon garlic powder
Instructions:
  • Add water to an Instant Pot, put in the trivet, place the rutabaga in the steamer basket, lock the lid, select high pressure for 8 minutes, and let pressure build for 10-15 minutes.
  • Using the manufacturer's instructions, carefully perform a quick-release of the pressure after 5 minutes. Remove the lid, drain the rutabaga, and place it back in the pot or a medium bowl.
  • Combine half-and-half, butter, salt, pepper, and garlic powder with rutabaga and mash to desired chunky consistency. Serve warm.
