Trendy Instant Pot® sweet potato casserole for easy gourmet dining.
Ingredients:
  • 6 sweet potatoes, peeled and chunked
  • 0.33333334326744 cup butter
  • 0.33333334326744 cup raspberry-chipotle sauce (such as Robert Rothschild Farm®)
  • 2 tablespoons heavy cream
  • 2 tablespoons brown sugar, or more to taste
  • 0.5 teaspoon pumpkin pie spice
  • 0.5 teaspoon salt, or to taste
  • 1.5 teaspoons butter
  • 0.33333334326744 cup chopped pecans
  • 0.5 teaspoon chipotle powder
  • 0.25 teaspoon ground cinnamon
Instructions:
  • 1. Insert the steam rack into your multi-functional pressure cooker, like an Instant Pot®. Pour water into the pot. Arrange sweet potatoes on the rack. Seal the lid securely. Choose high pressure and set the timer for 10 minutes. Let the pressure build for 10 minutes.
  • Carefully release pressure following the quick-release method as per the manufacturer's instructions for approximately 5 minutes. Unlock and lift off the lid, then take out the sweet potatoes and steam rack. Drain any remaining water and place the sweet potatoes back into the pot.
  • Combine butter, raspberry-chipotle sauce, cream, brown sugar, pumpkin pie spice, and salt with the sweet potatoes in the pot. Use a potato masher or stick blender to mash until smooth.
  • Heat butter in a skillet over medium heat until melted. Stir in pecans, chipotle powder, and cinnamon. Cook for about 1 1/2 minutes, stirring often. Serve over sweet potatoes.
