Instant Pot beer-infused baby back ribs, tender, sweet, and sticky in just 1 hour. For a kick, sprinkle cayenne in the rub.
Ingredients:
  • 2 racks baby back pork ribs
  • 0.25 cup dark brown sugar
  • 2 tablespoons garlic salt (such as Lawry's®)
  • 2 tablespoons chili powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper, or to taste
  • 1 cup beef broth
  • 12 fluid ounces root beer
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon liquid smoke flavoring
  • 1 cup barbecue sauce (such as Sweet Baby Ray's®), or more to taste
Instructions:
  • Cut into the edge of the rib racks using a butter knife, then easily lift off the silvery membranes using a paper towel.
  • Mix brown sugar, garlic salt, chili powder, black pepper, and cayenne pepper in a bowl. Make sure to generously coat the ribs with the dry rub.
  • 1. Insert the trivet into the Instant Pot. Pour in broth, root beer, vinegar, and liquid smoke. Arrange the ribs on the trivet, nestling one inside the other on their sides. Seal the lid, ensuring the vent is closed. Choose manual high pressure and set the timer for 30 minutes. Let pressure build for 10-15 minutes.
  • Allow the pressure to naturally release for 15 minutes following the manufacturer's instructions, then manually release any remaining pressure carefully using the quick-release method for about 5 minutes. Unlock and remove the lid.
  • Position the oven rack 6 inches from the heat source and preheat the broiler on the highest setting.
  • Place the ribs onto a broiling pan and generously smother them with barbecue sauce.
  • Broil until the barbecue sauce is bubbling and caramelized, for about 5 to 7 minutes.
