Decadent mashed sweet potatoes swirled with honey goat cheese - a seasonal side dish fit for any occasion!
Ingredients:
  • 3 pounds sweet potatoes, peeled and chopped into 2-inch pieces
  • 2 cloves garlic, peeled
  • 2 ounces honey-flavored goat cheese
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 0.25 teaspoon ground black pepper
Instructions:
  • Simply add water to your Instant Pot® and place potatoes and whole garlic cloves in the steamer basket inside. Lock the lid, set the venting knob to sealing, choose high pressure, and set the timer for 10 minutes. Wait for 10 to 15 minutes for the pressure to build up.
  • Carefully release pressure using the quick-release method following manufacturer's guidelines for 5 minutes. Unlock and lift the lid off the pot.
  • Uncover the pot, remove the trivet, and keep sweet potatoes and garlic in the pot. Add goat cheese, butter, salt, and black pepper, then mash to your preferred consistency. Serve while warm.
